Uncle Rasberry's Venison and Sausage Stew

This stew is very rich, delicious and easy, but it takes a little planning
because you have to make a cooked marinade first and it must be cool before you put the venison into it. However, you can make the marinade quite a long time in advance (a week or more), as it keeps very well in the fridge.

The marinade recipe is from the American household classic, The Joy of Cooking -- the measurements don't have to be fantastically precise so just use a not quite-full mug if you haven't got a cup measure in the house (teacups are too small).

Asturian Fish & Faba

During a trip to the Picos Iain asked me to make up a stew to include the legendary faba bean (the MOST EXPENSIVE bean!!) and fish rather than meat. This is a great area of Spain. Go there. And eat lots and lots of wonderful food. Then come home and try this. Or just try this. And remember my recipes are descriptive not prescriptive so be flexible and inventive.

Shepherd's Pie

Three hours clearing up the rancid mess from our very enjoyable Christmas party left me in need of comfort food. So for brunch I fried some smoked bacon and one egg, easy over, and put it into a toasted bagel. An afternoon wander round Hackney (two CDs from the library: Public Image and Ol' Dirty Bastard's greatest hits and the Pound Shop where I bought some last minute presents for my nearest and dearest) left me still in need of winter food so I decided that we'd have Shepherd's Pie for tea. I bought a packet of lean Aberdeeen Angus minced beef from M&S and basically cooked it how my mum used to but added a tin of butter beans as I like the flavour with the meat. It's worth making enough for two meals as it can be heated up in the microwave or oven or even eaten standing up at an open fridge door after a night in the pub.

Caribbean Stewed Chicken (via Hackney)

OK. This is something my mum has made since I can remember. Basically it's caramelised chicken and gungo peas with onions in a rich brown gravy that you serve with rice (and some other side dishes which we'll come onto another time, maybe).

Spagetti "Niku Miso"

Reversing the "Silk Road" or surprising Marco Polo (Spagetti noodle came to Rome from Far East originally...). Here is the Japa-Italian recipe. The mixture of garlic, pepper and a tint of rice wine is just heavenly, and it is simple to cook too. This is something I miss after a long working day!!!

Salmon & Fennel Stir-fry

This is a laughably simple, rich & reasonably cheap recipe, good for rustling up a quick lunch if you have guests around, though the ingredients aren't necessarily ones likely to be lying around.

Pan Fried Salmon & Irish Mash

My friend Monica asked me to put this one up. As usual it is very simple and makes a substantial meal. The mash has spring onions or 'scallions'as my mum calls them.
