Ricotta Bread
This makes two loaves
Preheat oven to 350 F, mark 4. Butter and flour a baking tray.
INGREDIENTS

4 cups flour (32 fl. oz)
2/3 cup castor sugar (approx. 5 1/2 fl oz)
2 teaspoons baking powder, ? teaspoon salt
2 cups ricotta (16 fl oz) blended with
3 eggs
1 tablespoon grated lemon peel
3 tablespoons slivered almonds
6 tablespoons chopped dried apricots
1/2 teaspoon vanilla

In a large bowl, mix flour, sugar, baking powder, and salt. Make a hollow.
And add "wet" ingredients. Mix well; knead lightly.
Form two oblong loaves. Bake on prepared tray for 50 minutes until lightly golden.
When still warm, butter top and dust with icing sugar.
