Pumpkin Pie
Seasonal and delicious
Preheat oven to 350 F, gas mark 4.
Prepare unbaked shortcrust shell and line deep 10 inch pie dish
INGREDIENTS
15 oz pureed pumpkin (Libby’s does pure pumpkin in a 14oz tin which is fine)
1/2 cup brown sugar
1/2 cup white sugar
1 1/2 teaspoons cinnamon, 1 teasp ginger, 1/8 teasp ground cloves, 1/2 teasp salt
2 eggs
1/2 cup evaporated milk
1/2 cup double cream

Combine all ingredients but last two. Mix well.
Put milk and cream in pan and heat to scalding. Add. Mix well.
Pour into unbaked shell. Bake 1 1/2 hours. Pie is done when knife comes out clean.
Serve chilled with whipped cream.
