Lemon Drizzle Cake
Camilla's recipe for delicious lemon drizzle cake...Very moist and sweet.
2 eggs
4 tablespoons milk
175g self raising flour
grated zest of one unwaxed lemon
juice of lemon
1 tablespoon icing sugar
175g butter(softened)
175g caster sugar
1. Cream butter and sugar. Gradually beat in eggs and milk.
2. Fold in flour with lemon zest.
3. Spoon mixture into greased 2 lb loaf tin.
4. Bake gas mark 4/ electric 180c/ fan 160c for 55-65 mins until golden brown.
5. Mix lemon juice and icing sugar (you may need extra sugar) to make a thin paste. Pour over cake as soon as removed from oven. Allow glaze to set before removing from tin. Set on wire rack to cool completely.

I thought the cake tasted amazing, my neice had a gymnastics competion on Sunday, by the time it was finnished i had one peice left, so i will be making it again this weekend and i shall be adding the lime as Slh suggested.

I decided to make cup cakes out of the recipe - and they worked out very well! The take about 20 mins to cook and cool very quickly, which is a real bonus!
Delicious, simple recipe that you can whip up in about 10 mins & I've made them twice so far!

Gorgous cake. I prick it all over with a fork before pouring the syrup on. This way it seeps right through. Im siding with Paolo on the spelling issue. I cant abide bad grammer,it shows a lack of education. And you shood all talk proper like wat I do!

Having trouble after 55 mins, not cooked enough....have left it in for longer in the hope that it doesn't spoil. Could be my oven, this is for a competition on Saturday...wish me luck!

This was absolutely lovely. I did it for 55 mins and it needed about another 10 minutes. I also needed to use a lot more icing sugar for it to turn into a thin paste. The cake went down very well so thank you for such a lovely recipe. :o)

It was lovely, however I think that the sponge ingredients still need the baking powder as most lemon drizzle recipes specify. Mine didn't rise as much as I would have liked. The best idea of all though is, using icing sugar instead of granulated or caster for the drizzle as it gives the cake a lovely sherbety taste. Don't give a damn if I spelt anything wrong if anyone is about to put me right !

Found this recipe after typing in Lemon Drizzle Cake into my search engine and have weekly requests to make it. It is fabulous. I stick all the ingredients into my processor, whisk it all up and bang it into the oven. Great and easy to do.

by the way, was thinking how long do you have to wait for the glaze to set? ie, how long do you need to wait to remove cake from tin??

This is simply a wonderful recipe. I think I will make two cakes next time out as it was eaten so quickly. Family just loved it.

just made this cake very nice only problem a bit on the small size might double up receipe next time to make a bigger one. the lightest cake i have made good cake . only need half lemon juice and add icing sugar as much as you need to make it thicker delicious!!!

My daughter's fiancee loves lemon drizzle cake, so I often make him one from this recipe. He loves it.
Went to make it today and I found I lost the recipe and as I couldn't remember all ingredients and quantities I went on the net to search for this recipe again. Alas, I couldn't find it!! I used another recipe from the net and although the cake looked ok,it didn't rise the same as this one. Now I have trawled through the net again and have found this well loved recipe again.
