Lemon Drizzle Cake
Camilla's recipe for delicious lemon drizzle cake...Very moist and sweet.
2 eggs
4 tablespoons milk
175g self raising flour
grated zest of one unwaxed lemon
juice of lemon
1 tablespoon icing sugar
175g butter(softened)
175g caster sugar
1. Cream butter and sugar. Gradually beat in eggs and milk.
2. Fold in flour with lemon zest.
3. Spoon mixture into greased 2 lb loaf tin.
4. Bake gas mark 4/ electric 180c/ fan 160c for 55-65 mins until golden brown.
5. Mix lemon juice and icing sugar (you may need extra sugar) to make a thin paste. Pour over cake as soon as removed from oven. Allow glaze to set before removing from tin. Set on wire rack to cool completely.

Lovely cake. I think I rushed mixing the bits together and ended up throwing the mix in the blender for a few minutes, which sorted it out nicely. The only other thing I found was that it takes a lot of sugar to make paste out of a whole lemon and I still had a watery but sweet consistency after adding a few tablespoons but I poured it anyway on the top and it soaked through and made the cake very moist and tasty, so I might well do that in future again.

We had a ball making this deilcious thursday afternoon cake. A real tounge-tantalising treat. I'm making another for our party tomorrow night. May include the lime as suggested by slh. May we also recommend fun Easter decorations for this festive season. x

This cake is really lovely, I agree about the syrup but I did the same poured it over the top and everyone here loves it. Feel sorry for the person who complained about the spellig how sad can you be?

This recipe has made my 77 year old mother in law a happy happy woman - it's absolutely amazingly delicious! It's become a permanent fixture at any family gathering - and sometimes...just 'cause :).

I made that cake and i thought it tasted lovely i used alot of sugar in the paste because it stayed runny for a while ,but as i am 11 years old i believe that the instructions were very easy to follow

I, too, discovered it went a bit lumpy, but straightened out fine in the oven. If this is often the case, perhaps a "Don't panic" note should be added?

Love the recipe - Lemon Drizzle is about my favourite cake ever - my main problem with this recipe is the will-power I will now require not to make (and eat!) the cake too often!
Mine was also lumpy to start with but fine in the end - but I find this to be true of lots of recipes where you add all the liquid at once rather than alternating eggs/flour etc
Oh, and I agree with Anastasia's thing about drawing a line under BOTH sides of the whole Grammar gripe...in fact, here it is____________

Rosemary I think it takes about an hour and twenty minutes in all (including time in oven).
