Leg of Lamb with Anchovies
Loosely based on a recipe from that Jamie Oliver bloke. OK, I know what you are thinking but I only had the book because there was a signed copy in the bookshop at work and a very good friend's girlfriend had a fixation on Jamie Oliver so I got him the signed book and he swapped it with the unsigned book which ended uo with me. Do I protest too much? Anyway this does taste really great so there you go...
INGREDIENTS
leg or half a leg of lamb
lemon
anchovies
rosemary
salt and pepper
Take your leg of lamb and score some deep cuts in it on both sides at least 1cm apart from each other. Then cover the whole thing liberally in lemon juice. Now stick an anchovy in each of the deep cuts and cram as much rosemary as you can into the holes and stick it on the oven following the instructions on the pack for how long you should cook it.
Don't forget to turn it about half way through to make sure it is crispy on both sides.
