Dirty lowdown cheats' potatoes
On Rhodri's insistence, this is how you make chunky potatoes somewhere between roasties and chips. I invented this recipe when I could not be arsed to make roasties just for myself one evening after work....
INGREDIENTS
Potatoes (King Edwards are good, any will do)
Oil (preferably olive)
Salt
Pepper
Pour a layer of oil into a roasting dish. Put it in an oven on full blast and leave for 15 minutes or so until it is very bloody hot.
Here is the cheat. Microwave a plateful of potatoes until almost cooked. Then chop them up, still with their skins on, into roast potato size.
Fling them into the hot oil turn them around a bit until they are covered, add salt and pepper and pop them back in the oven. Set the oven to something sensible like 200 or gasmark 8. After 10 minutes turn them and 5 minutes after that you will have lazy lowdown cheats' potatoes.
With any luck my brother Kieron will share the proper recipe for faultless roast potatoes (it is now practiced in Spain, Wales and Brasil btw). Until then, here is the cheats version.

stuck these with some garlic under a lemon chicken for about 30 mins at gas 7. Quite excellent.
