Tortilla de Potata

This is my favourite recipe for entertaining and perfect for enjoying with friends over a glass of wine on my lovely new decking that Mike and Paul helped me build.

You can make it carnivorous but the classic recipe just has eggs, potatoes, garlic and onions.

INGREDIENTS

6 eggs
2 medium sized potatoes
a medium sized onion
garlic
salt and pepper to taste
optional: try adding red peppers, chorizo or anything else you fancy to the mix but don't blame me if a spanish person tells you off.

-quantities are for a couple of people to have as a main or 4 snackistas

you will need - a deep but small frying pan for this number of eggs

OK, so fry your onion and garlic in olive oil until soft but not crispy, drain and put aside. Now, slice the potatoes into quite small and thin slices and cook these over a medium heat until soft right through. This is a bit fiddly but experiment and you'll get there. Now, put the onions, eggs and potatoes all together. Clean the frying pan and when the oil has heated up again sling the ingredients in there. Cook on a low heat and when the top starts solidifying or the bottom is looking too cooked (whichever happens sooner), you are ready for the flashy bit. Place a plate over the top of the saucepan as if it were a lid. Then, while holding the plate to the pan, quickly turn it over and you should have the uncooked part of the tortilla sitting on the plate. Slide it back into the pan and finish it off and you are done.
