Spaghetti Sicilian Style

I was poor, she was poor, we lived in London and we ate the cheapest meal that you can make. It actually tastes great all the same. Are Italians geniuses in the kitchen? Clearly.

INGREDIENTS

Spaghetti
Few cloves of chopped garlic
Chopped, flakes of chilli
Some green olives

Optional: you could add salami, capers, whatever

Cook some pasta (preferably spaghetti) until just al dente. Drain and reuse the pan by putting a generous covering of olive oil in the bottom of it. Heat it quickly, chuck in some green olives and the dried chilli flakes to taste, fry for about a minute, then add some chopped garlic and fry for 10 seconds or so. Now add the pasta back in, stir the whole thing rapidly, making sure the oil coats everything. This should take a minute or two, no more.

That's it. You are done.

soprano_eating.jpgFinally, one of the most beautiful scences in the Sopranos features Tony (Carmela's husband) reheating one of her tortelloni dishes in the microwave intercut with her unrequited love cooking the above dish in his bedsit. The lover washes it down with a coarse red. Tony opts for milk. You choose.
